We were excited to be contacted by Zari last week who produce non-alcoholic bubbly from the Western Cape’s Robertson region, and they’ve kindly sent us some great mocktail recipes for us all to enjoy!

ZESTY ZARI GRAPEFRUIT SANGRIA

Our Zari take on a traditional sangria for those who prefer a fresh mocktail that isn’t too sweet.

 

Ingredients

 

1 cup (250ml) freshly squeezed grapefruit juice

small handful of fresh mint leaves

6-8 cucumber slices

2 tbsp grapefruit zest twists1 small lime, sliced

small handful of fresh blueberries

1 cup (250ml) soda water

2 cups (500ml) ZARI Lifestyle Red

4 dashes of bitters

 

Method

 

  1. Pour the grapefruit juice into a large jug. Add the mint leaves, cucumber slices, lime slices,
    grapefruit zest and blueberries.
  2. Top up with soda water and ZARI Lifestyle Red. Add the bitters, stir gently and serve.

 

Servings: 4

 

CRANBERRY CHEER MOCKTAIL

A fruity and festive mocktail. Cinnamon infused cranberry juice topped off with Zari Red and zesty lime juice is the perfect drink to enjoy with friends and family over the holidays.

Ingredients

1 cup (250ml) cranberry juice

1 whole cinnamon stick

1⁄2 lime, sliced

1 cup (250ml)

soda water

2 cups (500ml) ZARI Bubbly Red

1⁄4 cup (60ml) fresh lime juice

rosemary sprigs, to serve

star anise, to serve

Method

  1. Place the cranberry juice and whole cinnamon in a small saucepan. Bring the juice to boiling
    point then remove from the heat. Set aside to cool and infuse.
  2. Remove the cinnamon stick from the cooled cranberry juice and pour the juice into a large jug.
  3. Add the lime slices. Top up with soda water, ZARI Bubbly Red and lime juice. Stir gently.
  4. Pour the mocktail into the glasses. Add a sprig of rosemary and some star anise to each glass before serving.

Servings: 5

 

BERRY BELLINI

Celebrate that special event with an elegant berry mocktail. The perfect balance of sweet and
sharp with a beautiful berry flavour.

Ingredients:

300g frozen mixed berries

1⁄4 cup (60ml) fresh lemon juice

3 cups (750ml) ZARI Bubbly White

fresh raspberries, to serve

pomegranate rubies, to serve

 

 

 

 

Method:

  1. Place the frozen berries and lemon juice in a small saucepan. Stir over a low heat, gently
    mashing the berries as you stir to form a sauce. Allow the sauce to simmer for 7-8 minutes, stirring
    regularly or until thickened.
  2. Strain the berry sauce through a sieve. Discard the pulp and set the sauce aside to cool.
  3. Place 3 teaspoons of berry sauce in each champagne flute and top up with ZARI Bubbly White.
  4. Stir very gently. Pop a few raspberries and pomegranate rubies in each glass before serving.

 

Servings: 4

 

THE GINGER NINJA

An elegant, modern twist on the classic, old-fashioned ginger beer. This exotic combination of
warming ginger, cool mint and zesty lemon packs a flavour punch.

Ingredients:

25g peeled and sliced fresh ginger

5 tsp (25ml) water

1 cup (250ml) soda water

small handful of fresh mint leaves

1 small lime, sliced

2 cups (500ml) ZARI Lifestyle White

5 tsp (25ml) fresh lemon juice

ice, to serve

 

 

 

Method:

  1. Use a food processor or a stick blender to blitz the ginger and water together until combined.
    Strain through a sieve and discard the pulp.
  2. Add 21⁄2 teaspoons of the ginger concentrate to a large jug. Add the soda water, fresh mint
    leaves and lime slices.
  3. Top up with ZARI Lifestyle White and the lemon juice. Stir gently, then serve with ice.

 

Serving suggestion: Add an extra teaspoon of ginger concentrate to the jug for an even stronger
flavour punch!

THE ROOIBOS REFRESHER

A cooling, refreshing summer mocktail incorporating the unique South African flavour of rooibos
and lemongrass and lime citrus notes.

 

Ingredients:

2 rooibos teabags

2 lemongrass stalks, split lengthways

11⁄2 cups (375ml) boiling water

small handful of fresh basil leaves

1 small lime, sliced

2 cups (500ml) ZARI Lifestyle White

1⁄4 cup (60ml) fresh orange juice

ice, to serve

 

Method:

  1. Place the rooibos teabags and lemongrass in a small bowl. Pour the boiling water into the bowl
    and allow to steep for 5 minutes. Remove the teabags from the bowl, then set aside to cool and
    infuse.
  2. Remove the lemongrass stalks from the cooled tea. Pour the tea into a large jug and add the
    basil leaves and lime slices.
  3. Top up with ZARI Lifestyle White and the orange juice. Stir gently, then serve with ice.
    Servings: 4-5
